  • 1 cup milk of choice (240 ml) – almond or oat milk recommended
  • 1 to 2 tablespoons honey (1530 ml)
  • ½ cup freshly squeezed orange juice (120 ml)
  • 1 tablespoon freshly squeezed lemon juice (15 ml)
  • 1 teaspoon orange zest (optional)
  • ½ teaspoon vanilla extract (2.5 ml)
  • ½ cup fresh citrus segments (about 120 g) – blood orange, grapefruit, or clementines, peeled and chopped
  • 2 tablespoons toasted nuts or seeds (optional) – sliced almonds or pumpkin seeds
  • Fresh mint leaves for garnish

Instructions

  1. Combine the chia seeds and milk in a mixing bowl. Whisk well to coat all the seeds and avoid clumps, about 2 minutes.
  2. Add honey and vanilla extract to the mixture and stir until well combined.
  3. Mix in freshly squeezed orange juice, lemon juice, and orange zest if using. Stir gently to combine.
  4. Cover the bowl with plastic wrap or transfer the mixture into individual jars. Refrigerate for at least 4 hours or preferably overnight to thicken.
  5. Prepare toppings by peeling and segmenting citrus fruits and toasting nuts or seeds in a dry pan over medium heat for 2-3 minutes if using.
  6. Once pudding is set, stir to check consistency. If too thick, add a splash of milk and mix.
  7. Spoon pudding into bowls or jars, top with fresh citrus segments, toasted nuts, and a drizzle of honey.
  8. Garnish with fresh mint leaves and serve chilled.

Notes

Whisk chia seeds thoroughly with liquid to avoid clumps. Chill for at least 4 hours or overnight for best texture. Toast nuts separately for added crunch. Adjust honey to taste. Use fresh citrus juice for best flavor. Can substitute frozen berries or pomegranate seeds if citrus is out of season.
