A quick and easy healthy breakfast bowl combining creamy cottage cheese, juicy pomegranate seeds, and crunchy granola, perfect for Valentine’s Day or any morning treat.

Ingredients

Scale
  • 1 cup (225g) full-fat or low-fat cottage cheese
  • ½ cup (about 75g) fresh pomegranate seeds (arils)
  • ¼ cup (30g) granola with nuts and a hint of cinnamon or honey
  • 1 tablespoon (15 ml) honey or maple syrup (optional)
  • A few fresh mint leaves for garnish
  • Optional add-ins: 1 teaspoon chia seeds, sliced almonds or walnuts, fresh berries (strawberries or blueberries)

Instructions

  1. Prepare the pomegranate seeds by tapping the back of a halved pomegranate over a bowl to release the arils and remove any white pith pieces (about 5 minutes).
  2. Spoon 1 cup (225g) of cottage cheese into your serving bowl and spread evenly but gently.
  3. Sprinkle ½ cup (75g) of fresh pomegranate seeds evenly over the cottage cheese.
  4. Add ¼ cup (30g) of your chosen granola on top.
  5. Lightly drizzle 1 tablespoon (15 ml) of honey or maple syrup over the bowl (optional).
  6. Garnish with a few fresh mint leaves and optional chia seeds or nuts.
  7. Serve immediately to keep granola crunchy. If waiting, keep granola separate and add just before serving.

Notes

Use small-curd cottage cheese for best texture. Add granola just before serving to keep it crunchy. Drain watery cottage cheese if needed. For dairy-free, substitute cottage cheese with coconut yogurt or silken tofu blend. Store ingredients separately if prepping ahead.
