  • ½ teaspoon vanilla extract (optional)
  • A few fresh mint leaves for garnish (optional)
  • A pinch of lemon zest (optional)

Instructions

  1. Rinse strawberries under cold water gently. Hull and slice evenly into halves or quarters. Set aside.
  2. In a mixing bowl, combine cottage cheese with vanilla extract and honey or maple syrup if using. Stir gently until well blended.
  3. Spoon the cottage cheese mixture into a serving bowl or glass. Arrange sliced strawberries evenly over the top.
  4. Break cookies into bite-sized chunks and sprinkle generously over the strawberries.
