Fresh Grilled Corn on the Cob with Zesty Cilantro Lime Butter

A quick and easy summer BBQ side dish featuring fresh grilled corn on the cob slathered with a creamy, zesty cilantro lime butter that brings smoky, tangy, and fresh flavors together.

  • 4 ears fresh corn on the cob, husked
  • 6 tablespoons unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon lime zest (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Prepare the cilantro lime butter: In a medium bowl, combine softened butter, chopped cilantro, fresh lime juice, lime zest (if using), garlic powder, salt, black pepper, and smoked paprika (optional). Mix until smooth and creamy. Set aside or refrigerate for about 10 minutes to firm up slightly.
  2. Preheat your grill to medium-high heat, around 350–400°F (175–200°C). If using charcoal, let the coals burn down to an even temperature (about 15 minutes).
  3. Husk the corn completely, removing all silk strands. Rinse and pat dry each ear.
  4. Place the corn directly on the grill grates. Grill for 10–15 minutes, turning every 2–3 minutes to get even char marks and cook the kernels fully. Look for a light golden to deep brown char with smoky spots.
  5. Remove the corn from the grill and immediately spread a generous amount of the prepared cilantro lime butter over each ear while still hot. The butter will melt and soak into the kernels.
  6. Serve the grilled corn warm with extra lime wedges and optional garnishes like chopped cilantro or smoked paprika.

Notes

If you want to make it dairy-free, swap butter for a plant-based spread. For low sodium, reduce salt or use a salt-free seasoning blend. Fresh lime juice is preferred over bottled for best flavor. If you don’t have a grill, roast corn in the oven at 425°F for about 20 minutes. Turn corn every 2-3 minutes on the grill to avoid burning. Softened butter spreads better and melts into the corn more effectively.
