A quick and refreshing salad combining crunchy cucumbers, creamy avocado, and savory everything bagel seasoning, perfect for summer and light meals.

  • 2 medium cucumbers, peeled if preferred and sliced thinly
  • 2 medium ripe avocados, diced
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons everything bagel seasoning
  • 1 tablespoon chopped fresh dill or parsley (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse and peel cucumbers if desired. Slice into thin rounds about 1/8 inch thick.
  2. Cut avocados in half, remove pits, and dice flesh into roughly 1/2 inch cubes. Handle gently to avoid mashing.
  3. Finely chop red onion. Soak in cold water for 5 minutes if you want to reduce sharpness, then drain.
  4. In a mixing bowl, combine lemon juice, olive oil, salt, and pepper. Whisk gently to blend.
  5. Add cucumber slices, diced avocado, and chopped onion to the bowl with dressing. Gently fold to coat evenly without mashing avocado.
  6. Sprinkle everything bagel seasoning over the salad and toss lightly to distribute.
  7. If using, add chopped fresh dill or parsley and fold gently.
  8. Taste and adjust salt or pepper if needed.
  9. Serve immediately or chill covered for up to 2 hours to prevent browning.

Notes

Do not overmix to keep avocado chunks intact. Prepare just before serving to avoid browning. Soaking red onion in cold water mellows sharpness. If everything bagel seasoning is unavailable, mix sesame seeds, poppy seeds, dried garlic, onion flakes, and salt.
