A quick and healthy breakfast bowl combining creamy cottage cheese, juicy orange segments, and crunchy toasted coconut flakes for a refreshing and satisfying start to your day.

Ingredients

Scale
  • 1 cup (225g) small-curd cottage cheese
  • 1 large ripe orange, peeled and segmented (remove pith)
  • 2 tablespoons unsweetened coconut flakes, toasted
  • 1 teaspoon honey or maple syrup (optional)
  • 1 teaspoon chia seeds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Toast the coconut flakes: Heat a small skillet over medium heat. Add 2 tablespoons of unsweetened coconut flakes and toast, stirring frequently, until golden brown and fragrant, about 3-5 minutes. Remove from heat and set aside to cool.
  2. Prepare the orange: Using a sharp knife, peel the orange, removing all the white pith. Segment the orange by slicing between the membranes to release clean segments. Set aside.
  3. Assemble the bowl: In a medium mixing bowl, add 1 cup (225g) of small-curd cottage cheese. Gently fold in the orange segments.
  4. Add sweetener and seeds: Drizzle 1 teaspoon of honey or maple syrup over the mixture if desired. Sprinkle 1 teaspoon of chia seeds for extra texture and nutrition. Stir gently to combine.
  5. Top with toasted coconut: Sprinkle the toasted coconut flakes generously over the top.
  6. Garnish and serve: Add a few fresh mint leaves on top for a refreshing aroma and color. Serve immediately.

Notes

Toast coconut on medium heat and stir constantly to avoid burning. Remove orange pith to prevent bitterness. Add toasted coconut just before serving to keep it crunchy. For dairy-free option, substitute cottage cheese with plant-based cottage cheese or thick coconut yogurt. Orange can be swapped with grapefruit or fresh berries seasonally.
