  • 1 cup (240 ml) small-curd cottage cheese
  • 1 cup (about 150 g) fresh strawberries, hulled and halved
  • 2 oz (56 g) dark chocolate (70% cocoa or higher)
  • 1 tsp (5 ml) honey or maple syrup (optional)
  • Β½ tsp (2.5 ml) vanilla extract (optional)
  • 2 tbsp (30 g) chopped nuts (almonds or walnuts, optional)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Rinse 1 cup (about 150 g) of fresh strawberries and hull them by removing the green tops. Slice the strawberries in half lengthwise. Set aside.
  2. In a medium bowl, combine 1 cup (240 ml) of small-curd cottage cheese with 1 tsp (5 ml) honey or maple syrup and Β½ tsp (2.5 ml) vanilla extract, if using. Stir gently until well mixed but still creamy (about 1-2 minutes).
  3. Break 2 oz (56 g) of dark chocolate into small pieces and place in a microwave-safe bowl. Heat for 20 seconds, stir, then repeat in 15-second bursts until fully melted and smooth (roughly 1-2 minutes total). Alternatively, melt over a double boiler on low heat, being careful not to overheat or burn the chocolate.
  4. Spoon the sweetened cottage cheese into your serving bowl or glass. Arrange the halved strawberries on top.
  5. Using a spoon, drizzle the melted chocolate artfully over the strawberries and cottage cheese, aiming for thin ribbons that cool to a hardened finish.
  6. Sprinkle 2 tbsp (30 g) chopped nuts like almonds or walnuts over the top for texture. Finish with a few fresh mint leaves for garnish.
  7. Serve immediately while the chocolate is slightly warm and the fruit is juicy. Refrigerate for up to 1 hour before serving if needed.

Notes

Melt chocolate slowly and stir often to avoid burning. Use small-curd cottage cheese for best texture. Assemble just before serving to keep strawberries fresh and chocolate drizzle warm. For dairy-free, substitute cottage cheese with coconut-based yogurt and use dairy-free chocolate.
