  • ¼ cup finely chopped fresh basil leaves
  • 2 garlic cloves, minced or sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch (about ⅛ teaspoon) red pepper flakes (optional)
  • Baguette or rustic Italian bread, sliced into ½-inch thick slices

Instructions

  1. Dice 4 large ripe tomatoes into small, uniform pieces (about ½-inch cubes) and place them in a medium mixing bowl.
  2. Add ¼ cup of finely chopped fresh basil leaves and mince 2 garlic cloves into the bowl.
  3. Drizzle 2 tablespoons of extra-virgin olive oil and 1 tablespoon of aged balsamic vinegar over the tomatoes.
  4. Sprinkle with ½ teaspoon salt and ¼ teaspoon freshly ground black pepper. Add a pinch of red pepper flakes if desired.
  5. Gently toss everything together until well combined, coating the tomatoes without mashing them.
  6. Set the tomato mixture aside for 10 minutes at room temperature to let the flavors marry.
  7. Slice a baguette or rustic Italian bread into ½-inch thick slices. Brush each side lightly with olive oil.
  8. Toast the bread over medium heat in a grill pan or skillet until golden brown and crisp, about 3 minutes per side. Alternatively, broil in the oven for 2-3 minutes per side.
  9. While the bread is still warm, rub one side of each slice with a peeled garlic clove to add subtle garlicky aroma.
  10. Spoon the tomato basil mixture generously over each toasted bread slice. Arrange on a platter and drizzle extra olive oil or balsamic if desired.
  11. Serve immediately to keep the bread crunchy and fresh.

Notes

If the tomato mixture is too watery, drain some juice before topping the bread to avoid sogginess. Do not skip the resting time for best flavor. Rub toasted bread with garlic while warm for best aroma. Prepare tomato mixture up to 1 hour ahead and keep refrigerated. Use gluten-free bread or crackers for gluten-free option.
