Fluffy, bite-sized pancake poppers that are soft, airy, and bursting with flavor. Perfect for brunch parties, busy mornings, or a sweet treat to pair with your coffee.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • Optional mix-ins: chocolate chips, blueberries, or diced strawberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin with cooking spray or melted butter to ensure easy removal.
  2. In a large mixing bowl, sift together flour, baking powder, baking soda, sugar, and salt. Whisk to combine.
  3. In a separate bowl, whisk together buttermilk, eggs, vanilla extract, and melted butter until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently with a whisk or spatula. Be careful not to overmix—small lumps are okay!
  5. If adding mix-ins like chocolate chips or berries, gently fold them into the batter.
  6. Fill each muffin cup about ¾ full with batter (don’t overfill, as the poppers will rise).
  7. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the poppers cool in the tin for 5 minutes, then gently remove them using a small spatula or knife.
  9. Serve warm with butter, syrup, or a dusting of powdered sugar. Enjoy!

Notes

[‘Don’t overmix the batter to avoid dense poppers.’, ‘Preheat the oven to ensure proper rising and even baking.’, ‘Grease the muffin tin generously to prevent sticking.’, ‘Watch the baking time closely to avoid overbaking.’, ‘Test with a toothpick to check doneness.’]
