  • 1/4 cup (60ml) milk, whole or 2%
  • 2 tablespoons unsalted butter, melted, plus extra for cooking
  • 1 cup (150g) fresh blueberries, washed and dried

Instructions

  1. Prep your ingredients: zest and juice the lemon. Crack eggs into a bowl and let come to room temperature (about 10 minutes).
  2. Mix dry ingredients: whisk together flour, sugar, baking powder, baking soda, and salt in a medium bowl.
  3. Combine wet ingredients: whisk eggs, ricotta, lemon juice, milk, and lemon zest in a large bowl until smooth.
  4. Fold dry ingredients into wet ingredients gently until just combined; batter will be thick and slightly lumpy.
  5. Stir in melted butter until incorporated.
  6. Fold in blueberries gently to avoid breaking them.
  7. Heat a non-stick skillet or griddle over medium heat and brush with butter.
  8. Pour 1/4 cup batter onto skillet; cook 2-3 minutes until bubbles form and edges look set.
