  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • Ranch or blue cheese dressing, for dipping
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, combine lemon juice, olive oil, minced garlic, chopped thyme, rosemary, salt, and pepper. Add the chicken pieces and toss to coat evenly. Let marinate for at least 15 minutes or up to 1 hour in the fridge.
  2. Prepare the Buffalo Cookies Dough: Preheat oven to 350Β°F (175Β°C). In a medium bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream softened butter with buffalo sauce until well combined. Gradually add dry ingredients to wet, mixing until just incorporated. Fold in shredded cheddar and green onions.
  3. Shape and Bake the Cookies: Drop tablespoon-sized dough balls onto a parchment-lined baking sheet about 2 inches apart. Flatten slightly. Bake for 12-15 minutes until edges are golden and cookies spring back when lightly pressed. Transfer to cooling rack.
