  • 68 slices provolone cheese
  • 1 large yellow onion, thinly sliced
  • 4 hoagie rolls or soft sub rolls
  • 2 tablespoons vegetable oil or olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 tablespoon butter (optional)

Instructions

  1. If not already thinly sliced, place the ribeye in the freezer for about 30 minutes until firm but not frozen solid. Slice into thin strips about 1/8-inch thick. Transfer to a bowl.
  2. Season the steak strips with salt, freshly ground black pepper, and Worcestershire sauce. Toss well to coat evenly. Set aside for 5-10 minutes.
  3. Heat 1 tablespoon of oil in a skillet over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 15-20 minutes until softened and golden brown. Add a splash of water if onions start to stick.
  4. Push the onions to one side of the skillet and increase heat to medium-high. Add the remaining oil. In batches if necessary, add the steak strips in a single layer and sear for 1-2 minutes per side until cooked through and browned. Avoid overcrowding.
  5. Mix the cooked steak and caramelized onions together in the skillet. Adjust seasoning with salt and pepper if needed.
  6. Slice the hoagie rolls lengthwise but not all the way through. Spread butter inside each roll and toast in a toaster oven or under a broiler for 1-2 minutes until golden and crisp.
  7. Divide the steak and onion mixture evenly among the toasted rolls. Layer provolone slices on top while the filling is hot so the cheese melts. Optionally, broil sandwiches for 1 minute to melt cheese more thoroughly.
  8. Serve immediately while hot.
