Flavorful Loaded Nacho Party Bowl with Soft-Boiled Eggs

A crunchy and creamy loaded nacho bowl featuring soft-boiled eggs and herbaceous Green Goddess dressing, perfect for entertaining and quick to prepare.

  • 4 large eggs (room temperature)
  • 1 can black beans (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 12 jalapeños (sliced, seeds optional)
  • 1 cup shredded cheddar cheese
  • 1 avocado (diced)
  • Green Goddess dressing (homemade or store-bought)
  • 1/4 cup fresh cilantro (roughly chopped)
  • Lime wedges (for serving)
  • Optional: sliced black olives, corn kernels, cooked chorizo

Instructions

  1. Bring water to a gentle boil in a medium saucepan. Carefully lower large, room temperature eggs into the water with a slotted spoon. Boil for exactly 7 minutes for creamy, jammy yolks.
  2. Immediately transfer eggs to an ice bath to stop cooking and make peeling easier.
  3. While eggs cook, rinse and drain black beans. Halve cherry tomatoes, thinly slice red onion and jalapeños (remove seeds if desired). Dice avocado just before serving to avoid browning.
  4. Heat black beans gently in a small pan or microwave until warm but not mushy.
  5. Spread a generous layer of tortilla chips on a serving platter or large bowl. Evenly distribute warm black beans, cherry tomatoes, red onions, and jalapeños over the chips.
  6. Sprinkle shredded cheddar cheese over the entire bowl. Optionally, pop the assembled base under the broiler for 2-3 minutes to melt the cheese, watching closely to avoid burning.
  7. Peel the soft-boiled eggs gently once cooled. Slice in halves or quarters and arrange atop the nachos.
  8. Drizzle Green Goddess dressing generously over the entire bowl.
  9. Scatter diced avocado, chopped cilantro, and lime wedges around the bowl. Serve immediately.

Notes

Use an ice bath immediately after boiling eggs to stop cooking and ease peeling. Add avocado and dressing just before serving to prevent soggy chips. For vegan version, substitute eggs with roasted chickpeas or extra avocado and use dairy-free cheese and tahini-herb dressing.
