  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 fresh jalapeños, thinly sliced
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, thinly sliced
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Juice of 1 lime

Instructions

  1. Slice the chicken breasts into bite-sized pieces and season with salt, pepper, ground cumin, and chili powder. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
  3. Add more olive oil to the skillet if needed, then sauté the sliced onions for 2-3 minutes until softened and translucent.
  4. Add minced garlic and sliced jalapeños to the skillet. Cook for another 2-3 minutes, stirring frequently, until fragrant.
  5. Return the cooked chicken to the skillet along with the sautéed veggies. Pour in the chicken broth and bring to a gentle simmer.
  6. Let the flavors meld together for about 5 minutes, stirring occasionally, until the sauce slightly thickens and coats the chicken.
  7. Remove the skillet from heat and squeeze fresh lime juice over the top. Sprinkle chopped cilantro for garnish.
  8. Serve hot and enjoy!

Notes

For a milder flavor, remove the seeds from the jalapeños. You can also substitute bell peppers for jalapeños. If the sauce is too thin, mix 1 teaspoon of cornstarch with 2 tablespoons of water and stir it into the skillet to thicken.
