  • ¼ cup honey (local, raw honey preferred)
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon apple cider vinegar
  • 1 small baguette (cut into ¼-inch slices)
  • 2 tablespoons extra virgin olive oil
  • 1 large garlic clove, halved (optional)
  • Pinch of sea salt

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into ¼-inch thick slices. Arrange on a baking sheet in a single layer.
  2. Brush each slice lightly with extra virgin olive oil and sprinkle a pinch of sea salt. Toast in the oven for 10-12 minutes, flipping halfway through, until golden and crispy.
  3. Remove from oven and rub each crostini with the cut side of the garlic clove for a subtle garlicky aroma. Set aside to cool.
  4. In a medium bowl, combine ricotta, heavy cream, lemon juice, salt, and black pepper. Using an electric mixer on medium speed, whip until smooth and fluffy, about 2-3 minutes. Adjust seasoning if needed.
  5. In a small saucepan over low heat, gently warm honey. Stir in crushed red pepper flakes and apple cider vinegar. Infuse for 3-4 minutes, stirring occasionally. Remove from heat and let cool slightly.
  6. Spread whipped ricotta on crostini or serve in a bowl with crostini on the side.
  7. Drizzle warm hot honey over the ricotta just before serving to keep crostini crisp.
  8. Optional: garnish with extra crushed red pepper flakes or fresh herbs like thyme or basil.
