  • 2 tablespoons honey (raw or organic preferred)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • ½ teaspoon salt (sea salt or kosher salt)
  • ¼ teaspoon freshly ground black pepper
  • 3 ounces (85 grams) creamy, softened goat cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and trim about 1 pound (450 grams) of rainbow carrots, cutting any thick ones in half lengthwise for even cooking.
  3. In a large mixing bowl, combine 2 tablespoons honey, 2 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 teaspoon finely chopped fresh thyme (optional). Stir until well blended.
  4. Add the prepared carrots to the bowl and toss to coat thoroughly with the honey mixture.
  5. Spread the carrots in a single layer on a parchment-lined rimmed baking sheet.
  6. Roast in the oven for 25-30 minutes, turning once halfway through, until tender and browned at the edges. Start checking at 20 minutes to avoid burning.
  7. While the carrots roast, mix 3 ounces softened goat cheese with 1 teaspoon lemon zest in a small bowl.
  8. Transfer the roasted carrots to a serving dish, dollop the goat cheese mixture over the warm carrots, and sprinkle with 1 tablespoon chopped fresh parsley.
  9. Serve immediately while warm.

Notes

If carrots aren’t caramelizing enough, broil for the last 2 minutes but watch closely to avoid burning. Soften goat cheese in microwave for 10 seconds if too firm. For dairy-free, substitute goat cheese with cashew-based vegan cheese and honey with maple syrup. Avoid overcrowding the pan to ensure proper roasting.
