  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh oregano or 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon honey or maple syrup

Instructions

  1. Cut the chicken into 1-inch cubes, keeping pieces uniform for even cooking.
  2. In a mixing bowl, whisk together garlic, olive oil, lemon juice, parsley, oregano, thyme, salt, pepper, smoked paprika (if using), and honey until glossy and fragrant.
  3. Add chicken cubes to the marinade, stir gently to coat, cover, and refrigerate for at least 30 minutes, ideally 1-2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the marinated chicken onto skewers, leaving space between pieces for even cooking.
  6. Preheat grill to medium-high heat (375-400°F).
  7. Grill kabobs for 10-12 minutes, turning every 3-4 minutes until lightly charred and internal temperature reaches 165°F.
  8. Remove kabobs from grill and let rest for 5 minutes before serving.

Soak wooden skewers for 30 minutes before grilling to prevent burning. Avoid overcrowding skewers to ensure even cooking. Rest kabobs for 5 minutes after grilling to retain juiciness. For indoor cooking, use a grill pan or bake at 425°F for 15-20 minutes, turning once.
