This easy and delicious recipe combines roasted garlic, crispy potatoes, and caramelized Brussels sprouts for a perfect side dish that pairs well with any meal.

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound baby potatoes, washed and halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced or thinly sliced
  • 1 teaspoon paprika
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley or thyme

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Trim the ends and outer leaves of the Brussels sprouts, then halve them lengthwise.
  3. Wash and scrub the baby potatoes, then cut them in half or quarters depending on size.
  4. In a large mixing bowl, toss the Brussels sprouts and potatoes together with olive oil, minced garlic, paprika, salt, and black pepper.
  5. Arrange the seasoned vegetables in a single layer on the prepared baking sheet to ensure even roasting. Don’t overcrowd.
  6. Place the sheet in the oven and roast for 25-30 minutes, flipping halfway through. The vegetables should be golden brown and tender when done.
  7. Sprinkle grated Parmesan over the hot vegetables and return them to the oven for 5 minutes until the cheese melts and forms a slightly crispy layer.
  8. Remove the baking sheet from the oven, sprinkle with fresh parsley or thyme, and serve warm.
