  • 4 large eggs, room temperature
  • Ice water (for cooling eggs)
  • 2 cups cooked white or brown rice (or quinoa as a substitute)
  • 1 cup celery sticks, thinly sliced
  • 1/4 cup blue cheese crumbles (optional)
  • 2 tablespoons chopped green onions
  • 2 tablespoons honey (for drizzle)
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Instructions

  1. Bring a medium saucepan filled with water to a rolling boil.
  2. Gently lower 4 large eggs into the boiling water using a slotted spoon.
  3. Boil for exactly 6 minutes for soft, jammy yolks (adjust time slightly for firmer yolks).
  4. Immediately transfer eggs to a bowl of ice water to stop cooking and make peeling easier. Chill for at least 5 minutes.
  5. While eggs are cooking, prepare 2 cups of white or brown rice according to package instructions. Fluff with a fork and keep warm.
  6. In a mixing bowl, combine shredded chicken with buffalo sauce, melted butter, garlic powder, and smoked paprika. Toss until evenly coated.
  7. Divide cooked rice between four bowls.
  8. Top each bowl with buffalo chicken.
  9. Slice soft-boiled eggs in half and add two halves per bowl.
  10. Scatter sliced celery sticks, blue cheese crumbles, and chopped green onions over the top.
  11. Drizzle about 1/2 tablespoon honey on each bowl.
  12. Garnish with fresh parsley if desired.

Notes

Use room temperature eggs for even cooking. Peel soft-boiled eggs under running water to avoid tearing whites. Drizzle honey just before serving to avoid stickiness. For dairy-free, use dairy-free butter and omit blue cheese. Rice can be swapped for cauliflower rice for low-carb option.
