  • 1 cup (150 g) corn kernels, fresh or frozen, thawed
  • 1 cup cooked brown rice or quinoa (optional)
  • 1 cup (120 g) shredded cooked chicken or tofu (optional)
  • 1/2 cup (120 ml) buffalo hot sauce
  • 1 tablespoon olive oil
  • 1/4 cup (65 g) natural peanut butter (smooth or crunchy)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice, freshly squeezed
  • Water to thin as needed
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup chopped peanuts

Instructions

  1. If using rice or quinoa, cook according to package instructions (about 20 minutes). Set aside to cool slightly.
  2. In a bowl, combine shredded chicken or tofu with buffalo hot sauce and olive oil. Toss well to coat evenly. Optionally, warm in a skillet over medium heat for 3-4 minutes until heated through, stirring occasionally.
  3. In a small bowl, whisk together peanut butter, soy sauce, grated ginger, honey, and lime juice. Add water, one tablespoon at a time, until smooth and pourable.
  4. Start with a base of black beans and corn in your serving bowl. Add rice or quinoa if using.
  5. Spoon the buffalo-coated chicken or tofu evenly over the base.
  6. Drizzle the peanut-ginger sauce generously over the top.
  7. Sprinkle chopped cilantro, green onions, and peanuts for crunch and freshness.
  8. Serve immediately or chill for 15 minutes if preferred.

Notes

Rinse and drain canned black beans well to avoid metallic taste. Fresh ginger is preferred for the drizzle. Warming the buffalo mixture enhances flavor. Press tofu before use to avoid sogginess. Adjust buffalo sauce to heat preference. Store peanut-ginger drizzle separately if prepping ahead.
