Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp kosher salt (adjust to taste)
  • ¼ tsp black pepper, freshly ground
  • ¼ tsp crushed red pepper flakes (optional)
  • 8 taco shells or soft tortillas (corn or flour)
  • A small handful fresh cilantro, chopped
  • Lime wedges for serving
  • Optional toppings: shredded cheese, diced tomatoes, sliced avocado, sour cream, salsa

Instructions

  1. Finely chop the onion and garlic, and chop the cilantro for garnish. Set aside.
  2. In a small bowl, combine chili powder, ground cumin, smoked paprika, dried oregano, onion powder, garlic powder, salt, black pepper, and red pepper flakes if using. Stir to blend.
  3. Heat a large skillet over medium heat and add 1 tablespoon olive oil. Heat until oil shimmers.
  4. Add chopped onion and cook until soft and translucent, about 3 minutes. Add minced garlic and sauté for another minute, stirring constantly.
  5. Add ground beef to the skillet. Break it up with a spatula and cook until browned and no longer pink, about 5-7 minutes. Drain excess liquid if necessary.
  6. Sprinkle the homemade seasoning mix over the cooked beef. Stir well to coat. Add ¼ cup water and simmer on low heat for 3-4 minutes until mixture thickens slightly.
  7. Warm taco shells or tortillas in the oven at 350°F for 3-5 minutes or microwave wrapped in a damp paper towel for 30 seconds.
  8. Assemble tacos by spooning beef mixture into shells, garnish with cilantro, add desired toppings, and squeeze lime juice over the top before serving.

Notes

If beef seems dry after seasoning, add a splash more water or beef broth to keep it juicy. For extra smoky flavor, add a dash of chipotle powder. Avoid overcrowding the pan to ensure beef browns properly. Warm tortillas wrapped in a towel for soft tacos or heat in oven for crispy shells. Homemade seasoning mix can be made in advance and stored in an airtight container for several weeks.
