  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour

  • 12 large marshmallows, halved
  • 1/4 cup graham cracker crumbs
  • 1/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease a standard muffin tin with non-stick spray or line it with muffin liners.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until fully incorporated.
  4. Sift in the cocoa powder, flour, and salt. Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Be careful not to overmix.
  5. Spoon the brownie batter evenly into the prepared muffin tin, filling each cup about halfway.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownie bites to cool in the pan for 5 minutes, then transfer to a wire rack.
  7. Set your oven to broil. Top each brownie bite with half a marshmallow, cut-side down. Place the muffin tin under the broiler for about 30 seconds, or until the marshmallows are golden and toasted. Keep a close eye to avoid burning.
  8. Sprinkle the toasted marshmallows with graham cracker crumbs and chocolate chips while they’re still warm. Let cool slightly before serving.
