  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups (135g) old-fashioned oats
  • 3/4 cup (135g) dark chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
  6. Using a spatula, gently fold in the oats and dark chocolate chips.
  7. Scoop the dough into 2-tablespoon portions and place them onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers look slightly underbaked.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
