  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 teaspoon baking soda
  • Β½ teaspoon salt
  • 12 Cadbury Cream Eggs, roughly chopped
  • 8 oz (225g) cream cheese, softened
  • Β½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or heavy cream

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Lightly grease your 9×13 inch baking pan or line it with parchment paper.
  2. In a large bowl, beat 1 cup softened butter, granulated sugar, and brown sugar together using a mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and glossy.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed until just combined. Do not overmix.
  6. Gently fold in the chopped Cadbury Cream Eggs with a spatula, keeping the chunks intact.
  7. Spread the dough evenly into the prepared baking pan in a thick, even layer.
  8. Bake for 25-30 minutes, until edges are golden and a toothpick inserted near the center comes out with a few moist crumbs. Bars should look slightly soft in the middle.
  9. Cool the bars completely in the pan on a wire rack for at least 30 minutes.
  10. To make the frosting, beat the softened cream cheese and Β½ cup butter together until smooth and creamy.
  11. Slowly add powdered sugar and vanilla extract, beating well. Add milk or cream one teaspoon at a time if frosting is too thick.
  12. Spread the frosting evenly over the cooled bars using an offset spatula or butter knife.
  13. Slice into squares or rectangles and serve.

Notes

Do not overmix the dough to avoid tough bars. Chop Cadbury eggs into bite-sized chunks to prevent excessive melting. Chill dough if eggs start melting too much before baking. Frost bars only after they have completely cooled to prevent melting frosting. Bars taste better the next day. Store in airtight container in fridge up to 5 days or freeze unfrosted bars up to 3 months.
