These decadent Cadbury Egg brownies combine fudgy chocolate brownies with gooey Cadbury eggs inside and a rich chocolate ganache topping, perfect for any occasion.

  • 1 ½ cups (300g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3 large eggs, room temperature
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • 6 Cadbury Mini Eggs (or regular-sized eggs cut in half)
  • ¾ cup (180ml) heavy cream
  • 8 oz (225g) semi-sweet or bittersweet chocolate chips
  • 1 tablespoon unsalted butter, softened (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper, leaving overhang on the sides for easy removal. Grease lightly if no parchment.
  2. Sift together cocoa powder, flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large bowl, whisk melted butter and granulated sugar until shiny and combined, about 1-2 minutes.
  4. Add vanilla extract and eggs one at a time, whisking until glossy and thick.
  5. Gently fold dry ingredients into wet ingredients until just combined; avoid overmixing.
  6. Pour half the batter into the prepared pan and spread evenly.
  7. Arrange Cadbury Mini Eggs evenly spaced over the batter, pressing gently to embed halfway.
  8. Dollop and spread remaining batter over the Cadbury eggs, covering completely.
  9. Bake for 25-30 minutes. Check doneness with a toothpick near the edge; crumbs should stick but no wet batter.
  10. Cool brownies completely in the pan on a wire rack.
  11. Heat heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over chocolate chips in a heatproof bowl. Let sit 2 minutes, then stir gently until smooth and glossy. Stir in softened butter if using.
  12. Pour ganache evenly over cooled brownies and spread with a spatula. Chill in fridge for 30 minutes to set.
