  • 810 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil

  • Lemon Aioli:
  • 1/2 cup mayonnaise (full-fat or light)
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon lemon zest
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to heat fully for at least 10 minutes.
  2. Trim the asparagus by snapping off the woody ends near the base, leaving about 6-7 inches of tender stalk.
  3. Prepare the lemon aioli by whisking together mayonnaise, fresh lemon juice, lemon zest, minced garlic, salt, and pepper in a small bowl. Chill while preparing asparagus.
  4. Bundle 3-4 asparagus spears and wrap each bundle tightly with one slice of prosciutto, starting at the bottom and spiraling up, leaving tips uncovered.
  5. Place the bundles on a wire rack set over a rimmed baking sheet to allow air circulation.
  6. Drizzle the bundles lightly with olive oil and sprinkle with a pinch of salt and freshly ground black pepper.
  7. Bake for 12-15 minutes until the prosciutto is golden-brown and crispy and asparagus is tender but still slightly firm. Add 2-3 minutes if softer asparagus is preferred.
  8. Remove from oven and let cool for 2 minutes to allow prosciutto to firm up.
  9. Serve warm with lemon aioli on the side for dipping or drizzled over the bundles.

Use thin-sliced prosciutto for best crispiness. Avoid overcrowding the pan to prevent sogginess. Rotate baking sheet halfway through baking for even crisping. Lemon aioli flavors intensify after chilling for a few hours. For dairy-free, substitute mayonnaise with vegan mayo. For gluten-free, ensure prosciutto has no additives. Reheat leftovers in a preheated oven at 375°F for 5-7 minutes to restore crispiness; avoid microwaving.
