  • ½ teaspoon kosher salt, or to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse 1 pound of fresh asparagus and pat dry thoroughly. Trim off the tough bottom inch or so.
  3. In a mixing bowl, combine the asparagus with 2 tablespoons of extra virgin olive oil, ½ teaspoon garlic powder (optional), ½ teaspoon kosher salt, and freshly cracked black pepper to taste. Toss until evenly coated.
  4. Sprinkle ½ cup of finely grated Parmesan cheese over the asparagus and gently toss again to coat evenly.
  5. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the asparagus out in a single layer without overcrowding.
  6. Roast in the preheated oven for 12-15 minutes. Around the 8-minute mark, gently toss or flip the spears using tongs or a spatula to ensure even roasting.
  7. Remove from the oven and immediately zest 1 lemon over the hot asparagus. Add 1 tablespoon of fresh lemon juice and toss gently to combine.
  8. Serve warm for best texture. If preparing ahead, add lemon juice just before serving.

Dry asparagus thoroughly before roasting to avoid steaming. Use freshly grated Parmesan for best crispiness. Roast in a single layer to prevent sogginess.
