  • 2 boneless, skinless chicken breasts, pounded to an even thickness
  • 1/2 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and use a meat mallet to pound them to about Β½ inch thickness.
  2. In one shallow dish, add the flour. In the second dish, beat the eggs. In the third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Coat each chicken breast in flour, then dip it into the beaten eggs, and finally press it into the breadcrumb mixture until fully coated.
  4. Add olive oil to a large skillet and heat over medium-high heat until shimmering.
  5. Place the coated chicken into the hot skillet and cook for 4-5 minutes per side, or until the crust is golden brown and the chicken is cooked through (internal temperature of 165Β°F/74Β°C).
  6. Transfer the cooked chicken to a wire rack or paper towel-lined plate to drain any excess oil.
  7. Serve immediately or keep warm in the oven set to low heat.

Notes

For a gluten-free option, use gluten-free flour and breadcrumbs. Ensure the chicken is evenly coated in egg before pressing it into the breadcrumb mixture for the best crust.
