  • pounds Brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon, chopped
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Juice from half a lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim off the tough stem ends and remove any yellow or damaged outer leaves from the Brussels sprouts. Slice each sprout in half lengthwise; quarter larger sprouts for even cooking.
  3. Chop the bacon slices into roughly 1-inch pieces.
  4. In a mixing bowl, combine the halved Brussels sprouts, chopped bacon, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss thoroughly to coat evenly.
  5. Spread the mixture in a single layer on a rimmed baking sheet, cut sides down. Roast for 20-25 minutes, flipping once halfway through (around 10-12 minutes) until edges are golden and crispy and bacon is rendered.
  6. Remove from oven and squeeze fresh lemon juice over the sprouts. Toss gently and serve immediately.

Notes

Dry Brussels sprouts thoroughly before roasting to avoid sogginess. Avoid overcrowding the pan to ensure crispiness. Flip gently with tongs to prevent breaking the sprouts. Broil for 1-2 minutes if bacon is not crisp enough, watching carefully. Optional: sprinkle parmesan cheese after roasting for extra flavor.
