A quick and easy recipe featuring bone-in, skin-on chicken thighs marinated in a zesty lemon pepper and fresh herb blend, then seared and roasted to crispy perfection.

  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 to teaspoons freshly cracked black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • Optional: pinch of crushed red pepper flakes or substitute lime zest for lemon zest

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim any excess fat or skin if desired. (5 minutes)
  2. In a mixing bowl, combine lemon zest, lemon juice, minced garlic, chopped fresh herbs, cracked black pepper, olive oil, and salt. Stir well to blend all flavors. (5 minutes)
  3. Add the chicken thighs to the bowl and toss to coat evenly. Let them marinate for at least 20 minutes at room temperature or up to 2 hours in the fridge. (15-120 minutes)
  4. Preheat the oven to 425°F (220°C). Place a cast iron skillet or heavy-bottomed oven-safe pan in the oven as it preheats. (10 minutes)
  5. Carefully remove the hot skillet and place it on the stove over medium-high heat. Place the chicken thighs skin-side down in the pan without overcrowding. Cook for 5-7 minutes without moving to build a crispy crust.
  6. Flip the chicken thighs skin-side up using tongs. Immediately transfer the skillet to the preheated oven. Roast for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  7. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Patting the chicken dry before seasoning is crucial for crispy skin. Do not overcrowd the pan to avoid steaming. Use a meat thermometer to ensure the chicken reaches 165°F (74°C). If skin is not crispy enough after roasting, broil for 1-2 minutes watching carefully to prevent burning. Marinate for at least 20 minutes; up to 2 hours for best flavor. Boneless skin-on thighs can be used but reduce cooking time by about 5 minutes.
