Instructions

  1. Prepare the Secret Sauce: In a small mixing bowl, combine ½ cup mayonnaise, 2 tbsp ketchup, 1 tbsp yellow mustard, 1 tbsp finely diced pickles or relish, 1 tsp garlic powder, and 1 tsp smoked paprika. Mix well until smooth and creamy. Season with salt and pepper to taste. Cover and refrigerate for 10-15 minutes.
  2. Preheat Your Cooking Surface: Heat your Blackstone griddle or cast iron skillet over medium-high heat for about 5 minutes until hot (around 400°F / 200°C).
  3. Form the Beef Balls: Divide the ground beef into 4 equal portions (about 4 oz / 115 g each). Gently roll each into a loose ball without overworking.
  4. Toast the Buns: Melt 2 tbsp butter on the griddle or skillet. Split buns and toast cut side down until golden and slightly crisp, about 1-2 minutes. Remove and set aside.
  5. Smash the Burgers: Place each beef ball on the hot griddle. Using a metal spatula, press down firmly to flatten to about ¼-inch thickness. Hold pressure for 10-15 seconds. Season with salt and pepper immediately.
  6. Cook the Patties: Cook undisturbed for 2-3 minutes until edges are dark brown and crispy. Flip carefully, add cheese slice if desired, and cook another 1-2 minutes for medium doneness.
  7. Assemble the Burgers: Spread secret sauce on bottom buns. Add lettuce, tomato, and pickles if using. Place cheesy patty on top, add sliced onions and more sauce if desired. Cap with toasted top bun.
