  • For the Blue Cheese Dip:
  • 1/2 cup sour cream (full-fat, about 120 g)
  • 1/2 cup mayonnaise (about 120 g)
  • 3/4 cup crumbled blue cheese (about 85 g)
  • 1 tablespoon fresh lemon juice (about 15 ml)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken wings dry with paper towels to ensure crispiness.
  3. In a large bowl, toss the wings with baking powder, salt, and black pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, making sure they are not touching.
  5. Bake the wings for 25 minutes, then carefully flip each wing using tongs.
  6. Continue baking for an additional 20 minutes until wings are golden brown and crispy and reach an internal temperature of 165°F (74°C).
  7. While wings bake, gently heat the BBQ sauce in a small saucepan or microwave.
  8. Transfer the baked wings to a clean bowl and toss with the warm BBQ sauce until fully coated.
  9. In a separate bowl, whisk together sour cream, mayonnaise, crumbled blue cheese, lemon juice, Worcestershire sauce, garlic powder, salt, and pepper to make the blue cheese dip. Adjust seasoning as needed.
  10. Serve the wings immediately with the creamy blue cheese dip on the side. Optionally garnish with chopped fresh parsley or green onions.
