Creamy Whipped Feta Dip with Roasted Cherry Tomatoes

A quick and easy creamy whipped feta dip combined with sweet, caramelized roasted cherry tomatoes, perfect for parties and gatherings.

  • 8 oz (225 g) feta cheese, crumbled
  • 4 oz (115 g) cream cheese, softened
  • 3 tablespoons olive oil, extra virgin
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 12 oz (340 g) cherry tomatoes
  • 1 teaspoon fresh thyme or oregano
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey (optional, for drizzling)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Rinse cherry tomatoes and pat dry. Toss with 1 tablespoon olive oil, 1 teaspoon fresh thyme or oregano, and a pinch of salt and pepper. Spread evenly on the baking sheet.
  3. Roast the tomatoes for 20-25 minutes until soft, slightly wrinkled, and caramelized around the edges. Remove and let cool.
  4. In a food processor, combine crumbled feta cheese, softened cream cheese, 3 tablespoons olive oil, minced garlic, and lemon juice. Pulse until smooth and fluffy, scraping down sides as needed.
  5. Fold about two-thirds of the roasted tomatoes gently into the whipped feta dip. Reserve the rest for topping.
  6. Transfer the dip to a serving bowl. Top with remaining roasted tomatoes, drizzle with honey if desired, and sprinkle with fresh thyme or oregano and black pepper.
  7. Serve immediately at room temperature or chill for up to 2 days. If chilled, let sit out for 15 minutes before serving.

Notes

If feta is too salty, soak in cold water for 10 minutes and pat dry before use. Watch tomatoes closely after 20 minutes to avoid burning. Dip tastes best slightly chilled or at room temperature. Vegan and dairy-free substitutions available.
