Instructions

  1. Freeze the Bananas: About 4 hours before making the nice cream, peel and slice 2 large ripe bananas into 1/2-inch pieces. Spread them on a parchment-lined tray and freeze until solid (about 4 hours or overnight).
  2. Prepare Strawberries: Hull and slice 1 cup of fresh strawberries. If using frozen strawberries, thaw slightly (about 10 minutes on the counter) to blend smoothly.
  3. Blend the Base: In a high-speed blender or food processor, combine the frozen banana slices, strawberries, 1/4 cup almond milk, and 1 teaspoon vanilla extract. Start blending on low speed, gradually increasing to high. Use a spatula to scrape down the sides every 20 seconds.
  4. Check Texture: After 2-3 minutes of blending, the mixture should be smooth, creamy, and thick like soft-serve ice cream. If too thick, add more almond milk 1 tablespoon at a time until desired consistency is reached.
  5. Serve Immediately or Chill: Scoop the nice cream into bowls for a soft-serve experience, or transfer to an airtight container and freeze for 30 minutes for a firmer texture.
  6. Add Toppings: Garnish with fresh strawberries, chopped nuts, shredded coconut, or a drizzle of honey as desired.

Notes
