  • 46 cookies, crushed (chocolate chip or shortbread recommended)
  • Strawberries for garnish (whole or halved)

Instructions

  1. Peel and slice 3 medium ripe bananas into 1/2 inch thick coins. Spread on a parchment-lined tray and freeze for at least 2 hours or overnight.
  2. Hull and slice 1 cup of fresh strawberries. Set aside a few whole or halved strawberries for garnish.
  3. Add frozen banana slices, 1/4 cup unsweetened almond milk, 1 teaspoon vanilla extract, and 1 tablespoon honey or maple syrup (if using) into a high-speed blender or food processor. Blend on high speed, pausing to scrape down the sides with a spatula until smooth and creamy, about 2-3 minutes.
  4. Add the sliced strawberries to the blender and pulse a few times to mix without pureeing completely.
  5. Transfer the nice cream to a mixing bowl and gently fold in the crushed cookies with a spatula to maintain crunch.
  6. Spoon the mixture into serving bowls. Top with reserved strawberry slices, extra cookie crumbs, and any optional toppings.
  7. Serve immediately for best texture. If needed, cover and freeze for up to 30 minutes before serving.

Notes

Let bananas freeze for at least 2 hours for best creamy texture. If blender struggles, let bananas thaw 5 minutes before blending. Fold in cookie crumbs at the end to keep crunch. Chill serving bowls beforehand to keep nice cream colder longer. Store leftovers in airtight container in freezer up to 24 hours; soften 5-10 minutes at room temperature before serving.
