  • 1 tablespoon (15g) mini dark chocolate chips – optional
  • A few fresh mint leaves, chopped or torn
  • Pinch of ground cinnamon or nutmeg – optional
  • Milk or almond milk (optional, to loosen cottage cheese if too thick)

Instructions

  1. Gently rinse 1/2 cup (75g) fresh raspberries under cold water. Set aside on a paper towel to drain fully.
  2. Place 1 cup (225g) of full-fat cottage cheese in a mixing bowl. Using a hand blender or food processor, pulse until smooth but still slightly textured. Skip this step if you prefer chunkier texture.
  3. Stir in 1 tablespoon (15ml) honey or maple syrup and 1/2 teaspoon (2.5ml) vanilla extract. Mix gently to combine. Taste and adjust sweetness if needed.
  4. Spoon the creamy cottage cheese mixture into your serving bowl or glass. Top with the fresh raspberries, scattering them evenly.
  5. Sprinkle 2 tablespoons (30g) chopped nuts and 1 tablespoon (15g) mini dark chocolate chips over the raspberries. Finish with a few torn fresh mint leaves and a light dusting of cinnamon or nutmeg if using.
  6. Optionally, drizzle a tiny extra bit of honey over the top for shine and sweetness. Serve immediately or chill for 10-15 minutes to meld flavors.
