  • 16 ounces cream cheese, softened

  • 8 ounces mascarpone cheese
  • ΒΌ cup heavy cream
  • 2 tablespoons espresso or strong coffee, cooled
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat your oven to 325Β°F (165Β°C). Line your 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until fully combined. Press the mixture firmly into the bottom of the prepared baking dish to form an even crust. Bake for 10 minutes, then set aside to cool.
  3. While the crust cools, make the cheesecake filling. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy, about 2-3 minutes. Be sure to scrape down the sides of the bowl for even mixing.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, mascarpone cheese, heavy cream, and cooled espresso. Blend until the mixture is fully combined and silky smooth.
  5. Pour the cheesecake filling over the cooled crust and spread evenly. Bake in the preheated oven for 35-40 minutes, or until the center is set and only slightly jiggles when shaken.
  6. Remove the cheesecake bars from the oven and let them cool to room temperature, then refrigerate for at least 4 hours (overnight is best) to set.
  7. Before serving, prepare the whipped cream topping. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Spread the whipped cream evenly over the cheesecake layer, then use a fine mesh sieve to dust the top with unsweetened cocoa powder.
