  • 2 tablespoons unsalted butter
  • 2 cups fresh mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 3 cups fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large round loaf of bread (sourdough works great!)
  • Extra bread cubes for dipping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped mushrooms and sauté for about 5 minutes, until they release their juices and become tender.
  3. Stir in the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic!
  4. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. This should take about 3 minutes.
  5. Remove the skillet from the heat and let the mixture cool slightly.
  6. In a mixing bowl, combine the softened cream cheese, sour cream, mozzarella, Parmesan, salt, and pepper. Mix until smooth and well combined.
  7. Fold the cooled mushroom-spinach mixture into the cheese mixture, ensuring everything is evenly distributed.
  8. Using a sharp knife, cut the top off the bread loaf to create a lid. Hollow out the inside, leaving about 1 inch of bread around the edges.
  9. Fill the bread bowl with the spinach mushroom dip and replace the lid.
  10. Wrap the bread bowl in aluminum foil and place it on a baking sheet.
  11. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes to crisp up the edges of the bread.
  12. Serve warm with extra bread cubes or veggies for dipping.

Notes

Use fresh spinach for better flavor and texture. Experiment with different cheeses like Gruyère or cheddar for unique variations. Reheat leftovers wrapped in foil at 325°F for 10-15 minutes.
