  • 10 oz frozen chopped spinach, thawed and drained
  • 14 oz canned or jarred artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Drain the thawed spinach thoroughly using a colander and press out excess water with a spoon or clean towel.
  3. Drain and chop the artichoke hearts into bite-sized pieces.
  4. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy.
  5. Add minced garlic, onion powder, salt, black pepper, and red pepper flakes if using. Mix well.
  6. Fold in the drained spinach and chopped artichokes gently but thoroughly.
  7. Stir in half of the Parmesan cheese and all of the mozzarella cheese.
  8. Transfer the mixture to an 8×8-inch baking dish and smooth the top.
  9. Sprinkle the remaining Parmesan cheese evenly over the top to form the crust.
  10. Bake for 20-25 minutes until the top is golden brown and bubbly.
  11. Let the dip cool slightly for 5 minutes before serving.

Notes

Drain spinach thoroughly to avoid watery dip. Use fresh grated Parmesan for best crust. Soften cream cheese before mixing. For extra crispy crust, broil for 1-2 minutes at the end, watching carefully to prevent burning. Can prepare dip ahead and refrigerate up to 24 hours before baking, adding a few extra minutes to baking time.
