Creamy Spinach Artichoke Dip with Mozzarella Cheese

A rich and creamy spinach artichoke dip with gooey mozzarella cheese, perfect for parties and quick weeknight appetizers.

  • 10 oz fresh spinach, roughly chopped (or frozen, thawed and squeezed dry)
  • 14 oz canned artichoke hearts, drained and chopped
  • 1 ½ cups shredded whole milk mozzarella cheese (about 150 g)
  • 8 oz cream cheese, softened (room temperature)
  • ½ cup sour cream (120 ml)
  • ¼ cup mayonnaise (60 ml)
  • ½ cup finely grated Parmesan cheese (about 50 g)
  • 2 cloves garlic, minced
  • ½ tsp salt (adjust to taste)
  • ¼ tsp freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh spinach, rinse and roughly chop it. Sauté in a dry pan over medium heat for 3-4 minutes until wilted. If using frozen spinach, thaw and squeeze out excess water.
  3. Drain and chop the artichoke hearts into bite-sized pieces.
  4. In a mixing bowl, beat the softened cream cheese with a spatula or hand mixer until smooth and fluffy.
  5. Mix in the sour cream and mayonnaise until fully combined and creamy.
  6. Stir in the Parmesan cheese, minced garlic, salt, black pepper, and red pepper flakes if using.
  7. Fold in the shredded mozzarella, sautéed spinach, and chopped artichokes gently to combine.
  8. Transfer the mixture to an 8×8 inch oven-safe baking dish and spread evenly.
  9. Bake for 20-25 minutes until the dip is bubbling around the edges and golden on top. Optionally broil for 1-2 minutes for extra bubbly top, watching carefully to avoid burning.
  10. Let the dip cool for 5 minutes before serving to thicken slightly.

Notes

Sautéing the spinach removes excess water and concentrates flavor. Drain artichokes well to avoid watery dip. Use softened cream cheese for smooth texture. Whole milk mozzarella melts better and adds gooey pull. Let dip rest after baking to firm up. Can broil briefly for extra bubbly top but watch carefully.
