  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 1/2 cups chopped frozen spinach, thawed and squeezed dry (or wilted fresh spinach)
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 large round rustic sourdough loaf (about 1 lb)
  • Chopped fresh parsley (optional, for garnish)
  • Extra shredded Parmesan (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Slice off the top third of the sourdough loaf and hollow out the inside, leaving a 1-inch shell. Reserve bread chunks for dipping.
  2. In a large mixing bowl, beat together cream cheese, sour cream, and mayonnaise until smooth and creamy.
  3. Add mozzarella, Parmesan, spinach, artichoke hearts, garlic, salt, black pepper, and red pepper flakes. Mix until well combined.
  4. Place hollowed loaf on a parchment-lined baking sheet. Spoon dip mixture into the bread bowl, mounding slightly. Sprinkle extra mozzarella or Parmesan on top if desired.
  5. Bake for 25-30 minutes, until dip is bubbly and top is lightly golden. Warm reserved bread chunks in the oven if desired.
  6. Remove from oven and let cool for 5 minutes. Garnish with chopped parsley and extra Parmesan. Serve with torn bread bowl pieces or reserved chunks for dipping.

Notes

Squeeze spinach thoroughly to avoid a runny dip. For a lighter version, use Greek yogurt instead of sour cream. You can prep the dip ahead and bake when ready to serve. Swap cheeses or add roasted red peppers for variety. Use gluten-free bread for dietary needs.
