  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 can black beans, drained
  • 1 cup corn (frozen or canned)
  • 1 can diced tomatoes with green chilies
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheddar cheese (optional)
  • Optional garnishes: fresh cilantro, lime wedges, sliced avocado, sour cream

Instructions

  1. Place the chicken breasts or thighs at the bottom of your slow cooker.
  2. Layer the black beans, corn, and diced tomatoes with green chilies on top of the chicken.
  3. In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, and cayenne pepper. Sprinkle evenly over the chicken and vegetables.
  4. Dot the softened cream cheese on top of the mixture.
  5. Pour in the chicken broth.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Remove the chicken pieces and shred them using two forks. Return the shredded chicken to the slow cooker and stir everything together until well combined.
  8. Serve over rice, quinoa, or in tortillas. Add your favorite toppings and enjoy!
