A quick and easy creamy, spicy pasta dish with seasoned chicken that is perfect for weeknight dinners or casual gatherings.

  • 12 oz fettuccine (or substitute with linguine or penne)
  • 2 medium-sized boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese, freshly grated
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Season the chicken pieces with 1 tablespoon of Cajun seasoning, salt, and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, lower the heat to medium and add the minced garlic. Cook for about 1 minute until fragrant, being careful not to burn it. Add the heavy cream and chicken broth, stirring to combine.
  5. Gradually stir in the grated Parmesan cheese until fully melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper. If you like it extra spicy, sprinkle in the red pepper flakes.
  6. Add the cooked fettuccine and chicken back into the skillet. Toss to coat the pasta and chicken evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
  7. Transfer the pasta to a serving dish and sprinkle with chopped fresh parsley for a burst of color and flavor. Serve immediately while hot and enjoy!
