A rich and creamy Alfredo pasta dish with tender seared chicken, perfect for cozy dinners or special occasions.

Ingredients

  • 2 large chicken breasts, sliced into thin cutlets
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 12 oz fettuccine or your favorite pasta
  • 4 cups water
  • 1 tsp salt
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp nutmeg (optional)
  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Bring 4 cups of salted water to a rolling boil in a large pot. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. Season the chicken cutlets with garlic powder, Italian seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Melt the butter in the same skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Slowly pour in the heavy cream, stirring constantly. Reduce the heat to low and let the sauce thicken for about 5 minutes.
  4. Stir in the grated Parmesan cheese, a little at a time, until fully melted and the sauce is silky smooth. Season with nutmeg (optional), salt, and pepper to taste.
  5. Add the cooked pasta to the Alfredo sauce, tossing until well coated. If the sauce is too thick, use the reserved pasta water to thin it out.
  6. Slice the seared chicken into thin strips and arrange them on top of the pasta.
  7. Garnish with chopped parsley and extra Parmesan cheese if desired. Serve immediately and enjoy!
