  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 cup black beans, rinsed and drained
  • 1 packet (1 ounce) taco seasoning
  • 1 cup chicken broth
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tablespoon lime juice (optional)

Instructions

  1. Place the chicken breasts in the bottom of your crockpot. If using frozen chicken, adjust the cooking time slightly.
  2. Add the diced tomatoes with green chilies, corn, and black beans on top of the chicken. Spread them out evenly.
  3. In a mixing bowl, combine the cream cheese, taco seasoning, and chicken broth. Stir until smooth and well-blended.
  4. Pour the cream cheese mixture over the chicken and vegetables in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours. The chicken should be tender and shred easily with a fork.
