Rich, velvety chocolate shells filled with luscious peanut buttercream—perfect for gifting, special occasions, or cozy nights in.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1/2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Optional: Chopped peanuts
  • Optional: Sea salt flakes
  • Optional: Sprinkles

Instructions

  1. In a medium mixing bowl, combine the peanut butter and softened butter. Use an electric mixer to blend until smooth and creamy.
  2. Add the powdered sugar and vanilla extract to the peanut butter mixture. Mix on low speed until fully incorporated, then increase to medium speed until the filling is light and fluffy.
  3. Using a spoon or small cookie scoop, portion the peanut buttercream mixture into 1-inch balls. Place them on a parchment-lined baking sheet and chill in the refrigerator for 1 hour (or freeze for 20 minutes for faster results).
  4. While the filling chills, melt the chocolate. Place the chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring between each, until completely smooth.
  5. Remove the peanut butter balls from the refrigerator. Using a fork or dipping tool, coat each ball in melted chocolate and gently tap off excess. Return the coated truffles to the parchment-lined baking sheet.
  6. Optional: Sprinkle toppings like chopped peanuts, sea salt, or sprinkles over the truffles while the chocolate is still wet.
  7. Let the truffles set at room temperature or refrigerate for quicker results. Once the chocolate is firm, they are ready to enjoy!

Notes

Chill the peanut buttercream balls before dipping to ensure they hold their shape. Use high-quality chocolate for the best flavor.
