  • 1 can chickpeas, drained and rinsed
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, minced (optional)
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium mixing bowl, add the drained chickpeas. Using a fork or potato masher, lightly mash them until they’re broken down but still chunky.
  2. Add the cooked chicken to the bowl with the chickpeas. Stir to combine.
  3. Fold in the finely chopped celery, minced red onion (if using), and parsley.
  4. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  5. Pour the dressing over the chicken and chickpea mixture. Stir gently until everything is well-coated.
  6. Let the salad chill in the refrigerator for 10 minutes to allow the flavors to meld.
