  • 2 boneless, skinless chicken breasts, sliced into bite-sized pieces
  • 1 package refrigerated or frozen tortellini (cheese-filled recommended)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, freshly minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice chicken into bite-sized pieces, mince the garlic, and set out your tortellini. Grate the Parmesan cheese if needed.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Once hot, add the chicken pieces and season with salt, pepper, and 1 teaspoon of Italian seasoning. Cook for 5-6 minutes, stirring occasionally, until fully cooked. Remove chicken and set aside.
  3. In the same skillet, add another tablespoon of butter and sautΓ© the minced garlic for about 30 seconds, until fragrant. Be careful not to burn the garlic.
  4. Pour in 1 cup of chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat to low and stir in 1 cup of heavy cream. Let the mixture simmer gently for 3-4 minutes until slightly thickened.
  6. Add the cooked chicken back to the skillet. Stir well to coat the chicken in the creamy sauce.
  7. Meanwhile, cook tortellini according to package instructions. Drain and add the cooked tortellini to the skillet with the chicken and sauce.
  8. Mix in Β½ cup of grated Parmesan cheese and stir until melted and combined. Taste and adjust seasoning with salt and pepper, if needed.
  9. Serve immediately, garnished with fresh parsley or additional Parmesan cheese, if desired.
