Deliciously creamy bites bursting with sweet, tangy blueberry flavor and satisfying richness of cheesecake, but with a healthy twist.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup Greek yogurt (full-fat or low-fat)
  • 1/2 cup vanilla protein powder
  • 2 tbsp honey
  • 1 tsp lemon zest
  • Pinch of salt
  • 1/2 cup almond flour
  • 1/2 cup fresh blueberries, washed and patted dry

Instructions

  1. In a large mixing bowl, combine cream cheese, Greek yogurt, and vanilla protein powder. Use a hand mixer or whisk to blend until the mixture is smooth and creamy.
  2. Add honey, lemon zest, and a pinch of salt. Mix well to incorporate all the flavors.
  3. Gradually fold in almond flour until the mixture starts to thicken. If it feels too sticky, add an additional tablespoon of almond flour at a time until it becomes moldable.
  4. Gently fold in fresh blueberries, being careful not to crush them.
  5. Using a small cookie scoop or tablespoon, scoop out portions of the mixture and roll them into small balls. Place them on a plate or tray lined with parchment paper.
  6. Refrigerate the bites for at least 1 hour to firm up. If you’re in a rush, you can freeze them for 20-30 minutes instead.
  7. Once chilled, serve immediately or store in an airtight container in the fridge for up to 5 days.
