  • 1/2 teaspoon salt
  • Pinch of black pepper
  • 12 ounces fresh or frozen ravioli (cheese, spinach, or meat-filled)
  • 1 cup heavy cream
  • Fresh parsley, optional for garnish
  • Grated Parmesan cheese, optional for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add minced garlic, diced onion, chopped carrots, and chopped celery. Sauté for about 5 minutes until soft and fragrant.
  3. Pour in chicken or vegetable broth and crushed tomatoes. Stir to combine.
  4. Add Italian seasoning, salt, and black pepper. Bring the mixture to a gentle boil.
  5. Lower the heat to medium-low and simmer for 10 minutes to meld flavors.
  6. Add fresh or frozen ravioli to the pot and cook according to package instructions.
  7. Reduce heat to low and stir in heavy cream. Warm through for an additional 5 minutes.
